Not all the ingredients you'll sample might appeal to you, as not everyone is fond of snails. However, in Marrakech, they are known as a true delicacy and a childhood memory for many Moroccans. To savor the flavors of the cosmopolitan city of Marrakech from the inside out, so different and so close, join the locals, who also love to drink the broth. And... good to know, in Morocco, it's not rude to slurp a little of your tea, soup, or broth. This way, by sucking in some air, the flavors are said to come out even better! Among all these dishes and drinks, there are sure to be a few you'll enjoy again and again during your visit to Marrakech. Because you might be able to get a panachée of mixed fresh fruit juices, even with avocado, at a trendy juice bar in the Netherlands, but in Marrakech, all that sun-ripened fresh fruit tastes so much better! And everyone loves Moroccan pancakes, msemen , for breakfast or as a snack. For slow food lovers of meat, the tanghia is a delicacy; an authentic Marrakchí dish; you won't find anything more Moroccan and regal than the tanghia at chez Haj Mustafa. And take note: this special dish is not the same as the tagine, the Moroccan stew with a pointed lid. Although the slow-cooked food from this stew is certainly also typically Moroccan. A visit to Marrakech cannot be complete without visiting Jemaa el-Fna Square.
Centrally located in the medina, the old walled city center, at the foot of the Koutoubia Mosque, lies Jemaa el-Fna Square. During the day, it is almost empty, with stalls selling fresh orange juice, dried fruits from the south, and snake charmers playing their monotonous flute music. In the evening, the square transforms into a vast open-air street food restaurant with countless food stalls. There is also an area dedicated to performers, where you can watch musicians, acrobats, and storytellers, or try your luck at the simple “fishing game” to win a bottle of soda.

Our advice for walking around Marrakech is to stay relaxed and cheerful when dealing with the sometimes-pushy merchants and souvenir sellers. A joke and a smile will make the experience much more enjoyable. Remember, you are never obliged to buy anything, under any circumstances, even if you have accepted a hospitably offered glass of mint tea.

For this atmospheric evening excursion, we meet at POSTE MAROC on the south side of Jemaa el-Fna Square, next to the new Cultural Heritage Museum. At the start of the tour, the local guide explains the program, what to expect, and how we avoid getting separated in the busy crowds.
The tour begins with “Berber whisky,” Moroccan mint tea, served as an aperitif with a simple but delicious snack such as sfenj or msemen. Along the way, the guide introduces the many herbs sold throughout the streets, used for a wide variety of herbal teas, and explains how to prepare and pour traditional Moroccan mint tea.

One of the highlights of this street food tour is tasting authentic local dishes. The most famous is Tanghia Marrakchia, a dish closely linked to the working people of Marrakech. It represents slow Moroccan cuisine without requiring hours of home cooking. The meat is prepared by the butcher and taken to the hammam stoker, where it slowly cooks for hours in the hot coals of the bathhouse. This efficient use of heat reflects traditional sustainability, similar to the public bread ovens often found near hammams.
